Owner/Chef Michael Le is French and Vietnamese, two cultures that merged as Chef Le was learning his craft as the son of a Vietnamese diplomat and French university professor. The resulting cuisine is delightful; and is at last attracting the broad audience it deserves . . .
The diverse and timeless flavors found in this unique combination of cultures can be attributed to the heritage of various nations that once occupied Vietnam and to the influences of its neighbors. The Chinese left their art of stir-frying using the famous wok; the French brought their passion for aromatic filtered coffee, vibrant sauces and crème caramel; and the exotic lemongrass and ginger were adopted from the Thai kitchen.
The genius of Chef Le's modern cooking technique lies in the innovative adaptation of all these foreign inspirations together with a simple, yet sophisticated method to create a unique and subtle cuisine.
With the heavy reliance on fresh herbs and vegetables, varieties of rice and noodles, minimal use of oil, and abundant choices of meat and seafood, French-Vietnamese food has to be among the healthiest
